Fresh Florida Strawberry Pancakes

Pancakes are a family favorite at our house, so much so that our son has declared every Sunday to be Pancake Day. To keep it interesting, I usually try to make a new pancake every week. It has been lot of fun to have this tradition and still keep it fresh. When we take family vacations to 30a or Seabrook, it’s fun to try to incorporate local flavors into our pancakes. One of our favorites that we picked up while visiting Florida in the spring is strawberry pancakes. They have the most delicious aroma that you can only get from fresh strawberries. This time of year, strawberries are making their way back into the markets and may even be starting to pop up in your strawberry patch at home, so good fresh strawberries should be easy to find. And make sure to save some for the topping as well. These will definitely be a family favorite!

Ingredients

  • 1 cup flour
  • 2 tablespoons of sugar
  • 3 teaspoons baking powder
  • ½ teaspoon of salt
  • 1 beaten egg
  • ½ cup milk
  • 6-8 strawberries hulled
  • 2 tablespoons of olive oil
  • vanilla extract

Directions

In a medium mixing bowl stir together the flour, sugar, baking powder, and salt. Make a well in the center of the dry mixture; set aside.

In another medium mixing bowl combine the beaten egg, vanilla extract and olive oil. In a blender blend half of the strawberries and milk and add to the egg mixture. Add egg mixture all at once to the dry mixture. Stir just till moistened. Dice the remaining half of the fresh strawberries and fold into the batter (batter should be lumpy).

For standard-size pancakes, pour about ¼ cup batter onto a hot, lightly greased griddle or heavy skillet. Cook over medium heat about 2 minutes on each side or till pancakes are golden brown, turning to second sides when pancakes have bubbly surfaces and edges are slightly dry. Serve warm. Makes 6 to 8 standard-size pancakes (6 servings).

Homemade Tortilla Recipe

We all have foods that bring us back to childhood. A big one for me is homemade flour tortillas. I remember my mom standing in front of a huge round bowl tossing in flour, salt and oil and hand mixing until they felt just right. When the mixture held together between her fingers she would know she had the correct ratio of ingredients and would add the hot water (which is very important to the process) and begin mixing and pinching the dough into little balls. When she was finished every surface of our countertops was covered in flour and little flattened discs of dough. We would have to wait the grueling 30 minute resting period before they were rolled out and thrown on the hot griddle.

A dry griddle would be warmed up on high heat. My mother impressively would roll these tortillas out to an almost see-through thinness. They would be draped all over the place waiting for their turn on the griddle. My siblings and I would line up in anticipation of what was to come. A tortilla would hit the hot griddle and immediately the surface would become covered in bubbles. It would be flipped after about 30 seconds and begin to puff up to incredible heights. One of us would immediately grab the hot tortilla, a stick of butter and tear back the waxy paper, rubbing cold butter all over the hot surface. The butter would melt instantly and we would roll the tortilla up and enjoy it on the spot!

Over the years I have spent a lot of time trying to reproduce and perfect my mother’s tortillas. I have simplified the process quite a bit while also figuring out the exact measurements that my mother knew just by instinct. Enjoy!

Ingredients

  • 3 cups All Purpose Flour
  • 1/3 cup plus 2 tablespoons cooking oil
  • 1 cup of hot water (don’t use it all unless needed)
  • 1 tsp salt.

Process

In the bowl of a stand mixer add flour, salt and oil. Beat with whisk attachment until combined. To test the mixture grab a bit of it and pinch it in your hands, if it stays together it is ready. With the mixer running on low add about 3/4 cups of the hot water (make sure the water is hot not lukewarm), turn up to medium speed and continue mixing. The dough should come together in a nice smooth piece. If too dry add more water, if too sticky add a little flour.

Homemade Tortilla Recipe

Turn the dough ball out onto a lightly dusted surface. Knead a couple of time and dived the dough into about 15-16 pieces by pinching off a clementine sized piece. Roll each one into a little ball, dust with flour and flatten a bit. Cover with a towel and allow to rest for about 30 minutes (this is very important).

Homemade Tortilla Recipe

With about 5 minutes left heat a dry (no oil) skillet or griddle over medium high heat. Remove one of the flattened disks and roll out until very thin. Resist the urge to leave them thick as they will not cook evenly. Place the rolled out dough on the hot skillet, it should bubble up quite a bit. Flip after about 30 seconds and allow too cook for about another 30-45 seconds. Remove from heat and cover with a clean kitchen towel. Repeat with remaining dough. Keep on the counter for about a day or refrigerate for about 4 days. To warm heat on the stove over low heat for about 15 seconds per side. You can allow freeze the leftover tortilla if carefully wrapped for a couple of months. Enjoy!

Everyone loves toast. So whether entertaining guests or serving a family meal, everyone wins when you serve toast!  These days it seems the status of toast has been elevated from a hurried breakfast staple to a more sophisticated snack with with the growing popularity of avocado toast but, believe us, avocados aren’t the only thing that tastes delicious on toast. A good piece of buttered and toasted bread makes an excellent surface for just about anything you want to pile on top. Everyone has their idea of a perfect combination of toppings, so putting out a variety of familiar toppings and throwing in a few unexpected ones will let your guests get creative and experiment a bit. There’s really no wrong way to go about putting together a toast bar. Chances are, if it sounds good to you, it probably is, but we wanted to share a few of our tried and true favorites with you to help you get started.

Of course, start with a heaping pile of buttered and toasted bread, we suggest a thinly sliced crusty peasant-style loaf. Now on to your toppings:

Roasted Garlic Method

Preheat your oven to 400 degrees, slice off the top of 2 heads of garlic, drizzle with olive oil and sprinkle with salt. Wrap each in and place on a cookie sheet or pan to roast for about 35 minutes. Remove from oven and allow to cool. The garlic cloves should pop out and be spreadable when you squeeze the head of garlic.

Roasted Tomato Method

Wash a dry one dry pint of grape or cherry tomatoes, pour into an oven proof skillet, drizzle with olive oil, and sprinkle with salt. Roast in a 400F oven for about 45 minutes. Use immediately or refrigerate unused portion for about 1 week.

However, there is something even sweeter to me about the the peace of being in our own space (donned in sweats) after our precocious toddler is off in dreamland. Especially when we’re on vacation and our sitter is miles away back home, it’s extra delightful to carve out time just for the two of us.

We believe in slowing down and enjoying the process as much as the end result. We’ve come up with a great date night that you can do in the comfort of your home or vacation home. Appetizer: Marcona Almonds & Marinated Olives & Cheese

These are a couple of our favorite quick snacks to eat while prepping a great meal. Marcona Almonds are a variety of sweet almond from Spain. They are slightly shorter and more plump compared to traditional almonds and we promise you’ll fall in love with their rich buttery flavor. As for the olives, don’t be tempted by any found in a jar or can, go for the bulk olives at your local Mediterranean or gourmet grocery store – the varieties are endless. Our favorite cheese for this pairing is Manchego but an old favorite will do just as well.

Cocktail: Cherry-Maple Sour

Ingredients:

  • 2oz gin
  • 1 oz pure maple syrup
  • juice of one lemon
  • 1 teaspoonful of sour cherry jam
  • ice

In a shaker filled 3/4 of the way with ice, add gin, lemon juice, maple syrup and cherry jam. Shake vigorously until the outside of the shaker feels really cold. Strain into a chilled glass. Makes 1 cocktail.

Main Course: Build Your Own Pizza

Ingredients:

  • 1lb ball of dough from your favorite pizza place or gourmet grocery store (we used Whole Foods)
  • Semolina or cornmeal
  • Favorite sauce or olive oil and minced garlic, herbs and sea salt
  • Favorite Toppings:
  • Artichoke hearts, mushrooms, sweet peppers, thinly sliced lemon, pancetta, tomatoes
  • Fresh mozzarella or cheese of choice
  • Finish toppings: fresh herbs, crushed pepper, arugula and lemon juice (your choice)

Let your ball of dough rest at room temp covered with a kitchen towel for 30 minutes while you begin to prep ingredients.

Preheat your oven to 500º F, if using a pizza stone make sure it is in there before you heat the oven. Prepare a pizza peel or the back or a cookie sheet by generously coating it with semolina or cornmeal. On a lightly floured surface place your ball of dough flatten it out a bit using the heel of you hand. Begin to stretch the dough by picking it and letting it hang and stretch, rotate and repeat until you have a large round. You can also roll it out but you will get more of flat, less bubbly pizza. Place the pizza crust on prepared peel or cookie sheet.

Spread the sauce of you choice or a combination of olive oil, minced garlic, herbs and salt. Add some of your favorite toppings, cover with a bit of cheese and finish with a few more toppings.

Carefully slide pizza onto the the hot stone in the oven using a hard forward flick, then begin to pull away the peel. If not using a stone, bake on a cookie sheet. Bake pizza for about 8 minutes and check. If you want the toppings to brown a bit more, broil for about 3 minutes watching carefully, as not to burn. Remove pizza from the oven, allow to cool for a few minutes, add your finish toppings if desired and slice. If you want a more portable pizza for a picnic, simple fold the dough over like a taco, pinch the edges shut and bake until golden brown.
